I'm new and still learning(a lot left to learn). I have a Dovo Stainless and an RA Carbon. I use both of them on the same latigo hanging strop.
I've experienced that poor technique can just as easily dull a stainless blade as it can a carbon blade. I was told when buying it that SS blades maintain there edge longer. This I believe to be possibly true, however... If the standard rule of practice is to strop daily before shaving then that would only apply to longer term maintained sharpness before needing to hone. This is all I can assume with little experience.
It also seems that SS is just as dependent on proper edge maintenance to keep the razor shave ready.
So my observation thus far pertaining to the OP's question is that technique matters much more than type of leather being used.
