    Use corby bolts? Ie the two sides screw together then the heads are ground off.

    There are available special rivets called 'cutlers rivets'. They have wide, flat heads and are supplied in pairs. One has a male shank and the other has a tubular female shank. They are an interference fit. You might need to file them to length for something as thin as a razor. Suppliers to the cutlery manufacturing trade carry them in various sizes, or you can make them yourself in a lathe. If my description isn't clear and you want me to post a drawing I will see if I can wrestle with the scanner.
