When applying, try toggling the buffer on/off to keep the wheel speed low. This should drastically reduce the spray. Also, if you make sure you let the compound sit overnight, it should firm up better and stay on the wheel longer. A good habit to get into is always reapplying the compound when you are done buffing, so when you come back it'll be ready to go.
sorry for the confusion. I was talking about when first applying to the wheel. I'll try the on off thing though.
