I don't think it is stronger than a centered 30, but it is stronger than a chisel 15. I think the sharpener is purported to offer a 15, but what our artist is demonstrating is a chisel 15 with another 15 degree micro bevel....which is actually a 30 inclusive (which is a bit large for a razor)
This actually makes sense if you consider the purpose of the device.

Are the Japanese blades that this sharpener is trying to imitate actually done with a 15 degree chisel grind and no micro bevel on the back? My understanding is that the edge is still around 30 degrees but the knife itself is thinner overall.

Prob not in a million years, but damn its worth a try... Worst case scenario is the gold dollar you run through te thing shatters and blow pieces of blade everywhere... Sounds like a win win to me, either you discovered something new and great or it be an epic fail
Either would be fun to watch...

Thanked: 1184It's not compared to a centered. It is added to a 15 degree single bevel. The purpose of the single is much like the microtone. It moves the slice that your cutting away.
