I looked into the situation myself and found some interesting data on the device you wish to use. Apparently your machine with the 15 degree angle may not be designed to do as you think. The Chef ’s Choice sharpeners are designed to create the 15 degree edge with a multi-bevel gothic arch geometry that provides more metal support for the edge, therefore making it more durable. Great for a knife but this will in no way work on a razor. Well, unless you want your face to fall away like a slice of tomato.

Help me out here. I am trying to see how an uncentered 30 degree included angle would be more durable than a centered one.

I don't think it is stronger than a centered 30, but it is stronger than a chisel 15. I think the sharpener is purported to offer a 15, but what our artist is demonstrating is a chisel 15 with another 15 degree micro bevel....which is actually a 30 inclusive (which is a bit large for a razor)

This actually makes sense if you consider the purpose of the device.

Am I right, 10?

Are the Japanese blades that this sharpener is trying to imitate actually done with a 15 degree chisel grind and no micro bevel on the back? My understanding is that the edge is still around 30 degrees but the knife itself is thinner overall.

I read that the older japan blades had a bevel on 1 side only and the newer style had the bevels offset like that. Here is a link to the pdf from Chef's Choice. The information is on page 3 if the link does not take you right to it.

The blade is thicker at the bevel and so it is less likely to roll over (dull)

Prob not in a million years, but damn its worth a try... Worst case scenario is the gold dollar you run through te thing shatters and blow pieces of blade everywhere... Sounds like a win win to me, either you discovered something new and great or it be an epic fail

Either would be fun to watch...

Not supporting the use of said machine on a razor but that picture is of a single bevel knife. I think it also does double bevel knives.

It's not compared to a centered. It is added to a 15 degree single bevel. The purpose of the single is much like the microtone. It moves the slice that your cutting away.
