A dream come true: I would like to eat a lot of beaver then have someone make a beaver coat out of the pelts, which I could wear over a alligator skin jumpsuit (yep, eat a mess of gators too). The ladies would go wild! Have to get some mirror shades also...

When living in southern Louisiana I had gator fixed several different ways. It is very tasty.

Crocodile, Emu, Water buffalo, Kangaroo, Goat, Witchetty Grubs, various small birds, grasshoppers, a particular kind of green ant that was like a mouthful of lemons and a few other various things have all spent time in my digestive tract. Not much out there that I wouldn't try when it comes to staying alive though.

Probably the strangest thing, my mother would serve deep fried sheep brains in batter. I think she was trying to disguise it, but first cut with the knife you knew what they were. Quite nice actually. She would also serve tripe(cow gut) in white sauce which I never liked. Sweet breads in bread crumbs are delicious. A good friend of my wife swore possum was the best eating, but because I trapped them for a living, could never get past the smell. Ostrich, swan, duck, rabbit, hare, venison, eel, kina(sea urchin),paua(abalone), goat is good, swordfish..yuck... never eaten testes, will leave that to the real men out there...

I take that back MickR: "The raw witchetty grub tastes like almonds and when cooked the skin becomes crisp like roast chicken while the inside becomes light yellow, like a fried egg."
I'd like an order of fire roasted witchetty grubs with a side of spicy crocodile sausage.

When I was growing up Possum's were rare in this area. Not so much anymore. I have heard that they come from the south in the big round hay bales. They have a hard time with our cold winters.

One night many years ago after fishing for catfish at night below the power dam my dad ran over a possum on the way home. Not with the tires and it was playing dead in the road. My uncle jumped out and hit it over the head with a tire iron. The next day my uncle cooked it up with a bunch of little potatoes. I mean little. The big ones were the size of your little finger nail. My brother and I thought it was a great meal and bet each other we ate 100 potatoes.

Fast forward to when my oldest son was starting to deer hunt. I was sitting with him in the stand and we had not seen any deer that morning. A possum walked by and he wanted to shoot it. I told him that he might scare any deer away but if he wanted to shoot it we would have to eat it. He shot it..... After carrying it back to the house I could not get past the smell to clean it.
