I used to eat possum as a kid. Like lima beans and asparagus, I don't have to eat them as an adult. I'm not sure that I agree about their being rare in the area years ago. I think they were common in Minnesota long before those big bales came around.

I only remember seeing them on a rare occasion. We never had any problems with them like my sister has when she moved to Nebraska.

Well, maybe they only were common in southern MN. You know, where it was a lot warmer in the winter--never getting much lower than 30 or 40 below!

One night many years ago after fishing for catfish at night below the power dam my dad ran over a possum on the way home. Not with the tires and it was playing dead in the road. My uncle jumped out and hit it over the head with a tire iron. The next day my uncle cooked it up with a bunch of little potatoes. I mean little. The big ones were the size of your little finger nail. My brother and I thought it was a great meal and bet each other we ate 100 potatoes.

Fast forward to when my oldest son was starting to deer hunt. I was sitting with him in the stand and we had not seen any deer that morning. A possum walked by and he wanted to shoot it. I told him that he might scare any deer away but if he wanted to shoot it we would have to eat it. He shot it..... After carrying it back to the house I could not get past the smell to clean it.
Try skinning and pegging 25-50 skins a day, the last thing you wanna do is eat one...Bring me the bacon...
That was a long time ago, I think if someone prepped it now I would give it a try. The possum we have is the Australian version. Our forefathers in all their infinite wisdom decided to establish a fur trade here by releasing a few breeding pairs along with rabbits and hares...brilliant. The Aussie possum is now controlled with 1080 poison to stop it devastating our forests. Was a good earn back in the day when a top skin would fetch $30. I would average out about $5 a skin, but then the bloody greenies got on board and killed the fur trade.
Beautiful fur, and the colder the area the better they were. Winter after molt got the best money.
Ironic they are protected in Aussie, shall I send you a few Mick?? Think I heard one outback..

I'd like an order of fire roasted witchetty grubs with a side of spicy crocodile sausage.
Yes the poor old Witchetty is much maligned. He really is a tasty treat.

You can keep 'em Grazor. I get sick of pulling the buggers out of my mates chimney spout where they seem to like to camp. Strong little buggers when they got something to hook on to I tell ya. I can't say I know their taste or smell, but if it's anything like rabbit, the smell during prep is godawful, but the taste would be divine.

there is something about whoever's posts that remind me a little of the writing on a Dr. Bronner's Peppermint Soap label. I mean that in a good way!
