    Just made some hickory smoked, thick cut bacon this morning. My Canadian brethren, is "back bacon" what we in the states call "Canadian bacon"? When my wife and I travel to Niagara Falls I always get it with breakfast at the Fying Saucer Diner nearby. It's wonderful. When I try to buy it here it is always a lot more like ham than it is bacon.

    That setup is used to cold smoke bacon and cheese.
    The right side is the heat, left side is the cold smoke recipient, and pulls out the bottom draft. The BBQ Guru pushes the smoke over and out.
