As of late, I have been replacing the milk component of my pancake or waffle recipe with plain yogurt (perhaps 75% yogurt, 25% water to reduce the viscosity). This seems to have had the effect of giving me consistantly light and fluffy pancakes and waffles that taste great.

I'll definitely have to give that a try.
For some reason my waffles turn out ok, but my pancakes usually end up really dense.
I have no idea how this happens using the same mixture. I've settled on a theory that my waffle iron has magical powers.

In my whole grain no chemical days (before my children reached the age when they discovered sugar and whateveryonelseats) I made pancakes with a variety of whole grains. This can result in pancakes that make fine paperweights. To lighten them, and to make them rise, I folded in egg whites that had been whipped enough to hold stiff peaks). Still my preferred method. You can then skip baking powder or whatever else you use to make them rise.

Thanked: 90I just figured out how to make pancakes from scratch, and it's unbelievably easy. The raw materials are pretty simple.
All purpose flour
baking powder
salt (a pinch)
sugar
egg
milk.
It's not unlikely that you have that stuff on hand already. Recipies are easy to come by on the web.
I'm looking forward to trying the yoghurt trick

I always add a little vanilla to my waffles it adds that little extra something.
