    I've been getting slabs and slicing my own for a while now, the only way to go. The flavors and textures are FAR greater than the watered down pre sliced stuff from the mega marts.

    I'm making a pasta sauce now with slab bacon, my own tomato, carrots, garlic, and capers. Sear it all off deglase with a white wine (or home made pepper vodka ) add a pat of butter and toss in your favorite pasta shape
    I LOVE bacon. I have thought about getting it in slab, and rather than cutting the narrow strips, cutting a larger, thin piece, tortilla size, wrapping my potatoes, onion etc in that, and dropping it in a frier real quick. think that would work?

    My wife likes my idea of getting a traditional heart and dagger tattoo, with "Bacon" on it and the words 'Love kills slowly"

    In a pinch I grabbed a bag of ends and pieces of some maple cured bacon last night... talk about some random stuff All and all it has a reasonable mix of fat and lean so all is good. Made my tomato sauce (above) again tonight and was very pleased with the stuff

    My wife and I recently went to visit her parents and one morning we all went out for breakfast at a very nice resort with an amazing Sunday buffet. As we came back to the table, I saw my father-in-law's plate, which had very little food on it. So I asked him why he passed on many of the delicious offerings. He paused for a moment then said, "So I have more room for bacon."

    Wise man indeed!
