Oh ya and Nacho Cheese Rocks!!

I had a friend that loved nacho cheese, he used to go to del taco or taco bell (whichever one had the mexican pizza on the menu). He'd order a mexican pizza with nacho cheese on it. He used to eat those like they contained crack.

    Just something to look into.

Mmm, cheese. I think some of my favorites are pepperjack, sharp cheddar, and smoked goat cheeses.

    Manchego is amazing.

I'm a big fan of the soft creamy stuff too - clarines and pont leveque. So gooey you could (should?) eat it with a spoon

Oh - and good parmesan, ash chevre, pecorino, fetta, cheddar ...

And a good bottle of red to wash it down

    All cheese is good,

My favorites would be Brie, Munster, fresh Mozzerella, Blue, Chedder, Smoked Gouda, Parmisan, Sardo, and Monterrey Jack.

I am sure there are more I am missing.

I like a good mature cheddar, a blue cheese or Port Salut.

I also like brie and edam.

    Good thread!

Mmmm cheese.. I really like stinky cheese so Epoisses is my favorite. I do also like Mimolette, Roquefort d'Argental & Cypress Grove Humboldt Fog. For those of you that live in the US Murrays' Cheese Shop is a great site to pick up some good stuff.
