    Default Favorite Veggies

    This time of year seems to be the time I end up eating more vegetables than animal proteins ( yes I know it is backwards). Just wondering what are some of you favorite vegetables and how do you like them prepared?

    This time of year I love asparagus and especially grilled with a little olive oil, salt and pepper on them. The best part is I live 5 minutes from a farm of it so I get it straight from the fields.

    Later in the summer I eat a lot of tomatoes and green peppers as my mother in law ends up giving us bushels of them so she doesn't waste them.

    broccoli in the microwave for me and I eat it often. Some sautéed onion and garlic with a bit of olive oil is a nice compliment if mixed in as well.
    Be careful how you treat people on your way up, you may meet them again on your way back down.

    This time of year, grean beans. Boiled for 3 minutes, sauteed for another 2 with butter and salt. Crisp and clean, delicious...

    This time of year nothing beets (see what I did there? >_<) a fresh home-made Greek salad: cucumber, tomatoes, peppers, red onion, lots of olives, and feta. With olive oil-balsamic vinegar dressing. Throw in some grapes of green apple for a nice change. (I didn't forget the lettuce, I just hate lettuce)

    That sound great.. the problem is no one in my family likes beets except me.

    We eat lots of veggies in the summer time one or our favorites is zucchini and they also make great fries I put it in everything omelets with peppers onions and what ever I can get and you get a very good protein source.

    We like grilled asparagus with olive oil a lot, but lately we have been adding a wrap of prosciutto. Big improvement. A few shavings of parmigiano finish it off nicely.

    Asparagus is tasty. This year on several occasions I bought a bunch of it, steamed it and laid it between a halved very fresh locally made multi grain bun with nothing else but some mayo and hot pepper flakes. The sandwiches were exquisite. My wife doesn't like when I eat the whole bunch at one time though. Too odiferous afterward.

    Radishes, Heirloom tomatoes, beets, chard (sauteed with olive oil, garlic and some broth). I don't know if there's a vegtable I don't like, really.

    Asparagus is great. We are growing some in our garden but it is still small.
    Also like avocado in salads on sandwiches or of corse in guacamole but I think avocado might actually be a fruit.
    And something I have to make some time is an onion and watermelon salad, I know sounds weird but its just Onion Watermelon and some Black pepper and it's great. I had it at a vegetarian restaurant about 2 years ago.
