Thread: How do you like your eggs?

If I'm at a restaurant I always order over easy to ensure I'm getting real eggs and not that stuff from a carton or worse yet powdered BLEH! & if I'm at home I like scrambled eggs with hot peppers and cheese... mmm hungry...

Hard boiled. I have 5 every morning, but only 1 yolk. I have read while the yolk contains a high concentration of vitamins, it is also high in saturated fat and cholesterol and not to have more than 1 a day. The whites are the most complete protein there is. Sorry to sound boring.

Most commonly I make either a fried egg sandwich with egg, bacon, sausage or scrapple. Sometimes I like to do it over easy and open faced and have a lazy man's eggs Benedict (the real deal is possibly the greatest breakfast dish in the history of the world).
One of my other favorites is a soft boiled egg (or two), served with a slice of dense bread (pretty much anything sold at the Russian market), some hard cheese and some sort of smoked meat. Again,.the Russian market makes life easy. I can slice up any of the sausages they carry or the crazy smoked bacon that doesn't need to be cooked.

I can't believe that I haven't heard about tapatio yet in this thread.
My opinions on eggs are:
-farm fresh (we raise our own)
-light seasoning
-gotta love the cheese
Other than that I'm not too picky, but I'm talking to the wife about the OP.

Thanked: 0I like every form of egg I've ever tried, but deviled is my favorite; I mix the yolks with mayo, a sprinkle of salt, sweet pickle juice, a little mustard, and then a healthy dusting of paprika.
I also like them scrambled. Heavily butter the cast-iron skillet, then crack the eggs into it. Let the whites set up a bit. add salt and pepper to taste, and use a flat-ended wooden spatula to mix the eggs and keep the eggs from sticking to the bottom too badly.

Thanked: 1185It's probably about 50/50 between scrambled and over easy. When I do scrambled of course some cheese is added. In either case, grits, potatoes, pig fat (bacon, sausage and/or ham) and Tabasco sauce are involved. Generally though, I just like eggs, poached, hard boiled, sunny side up whatever, it's all good. Special shout out to egg sandwich with cheese and fried bologna.

Thanked: 983I'm with 1OldGI. I like my eggs any which way. I haven't had pickled for a long time though, so maybe I might have to make some up now for consumption in a few months time.
