As you become proficient at honing, you may see a difference between 8K and 12K. Many will correctly (IMO) state that you should be able to get really good shaving edges from the 8K hone.

Yes, it is fine to sharpen other tools with your hones. Regardless of if you sharpen other tools or not, you will want to make sure your hones are clean and FLAT (every time) before you put a razor on them.
