I used to be able to order excellent dumplings delivered to my door until midnight. Steamed, fried, with CHILI SAUCE - I didn't know how good I had it. Sadly, neither of the two Chinese restaurants over here offer decent dumplings. It's one of the few things I really miss.

Damn, Seth, them is some fine looking gyoza!
We don't put cabbage in ours, just meat and nira, and then the ginger, S&P, and sesame oil...but I'll bet the cabbage adds some juice to the mix, huh?

Those look delicious, I usually buy mine, frozen, from an asian market and have wanted to try to make my own, so ya thanks for the recipe!

Thanked: 199There is also a korean variation on the gyoza where they use kimchi inside. It is also VERY good. You guys are making me hungry...any of you over in Japan want company?
If I could find work over there, I would SO be there...not sure how to go about that tho

I make perogies too. I am originally from Western Canada and we have a large Ukrainian (as well as Polish and other East European countries) poplulation in my home city of Edmonton. I was in a Ukrainian dancing group for ten years as a child and the Christmas party always had millions of hand made perogies soaking in hot butter. I loved those old ladies for making them.
Now I usually make the filling with bacon bits and grease, fried onions and some kind of cheese (cottage or ricota or chedder) mixed with the mashed potato. I have a great recipe for the dough that has mashed potato incorporated into it. My favourite food growing up was 'Cheemo Perogies' that you could get frozen at Safeway or IGA. I've tried them using the gyoza wraps but it isn't the same.
Another great perogy innovation is the perogy pizza that is served at the chain store 'Boston Pizza'. Absolutly delish!!
Now back to gyoza.笑う門に福来たる。

My mom's secret recipe is gyoza. They are the BEST!!! She does not wring out the cabbage. Does it make that big of a difference?
