    I believe that I've seen most of these dishes fixed and shown here but there may be one or two that haven't.

    There should also be some links to recipes if anyone is interested

    I used, I do not have a recipe I just wing it.

    1/2 c flour, 1/2 fat, to make roux, cooked brown to something darker than milk chocolate but lighter than dark chocolate. would be better with a full cup but I was trying to lessen carbs a bit.

    one onion, bell pepper, 3 sticks of celery aka trinity

    5 or 6 garlic cloves

    one flat of chicken thighs, deboned and skinned, cooked partway on grill with cajun seasoning

    one ring smoked sausage

    chicken stock

    salt, pepper,cayenne

    ------------

    make roux

    dump in trinity before roux burns, add a bit of salt, cook till onions clear

    dump in garlic, cook for short bit

    deglaze with chicken stock, add about an inch of chicken stock

    add meat, salt, pepper, and cayenne

    cook for a while, serve with a bit of rice on top.

    the ingredients (types of meat) do not matter a lot, it is the method that matters.
    you can add okra, or add file right before serving but I like mine without okra or file.

    Every time I see a dish like that and someone asks for a recipe I think of whatever was left over/available in the refrigerator.

    Benz took me to an antique store and I ended up buying some cast iron cookware:
    Benz waited until I was only a day away from home to put them in the mail. They were scheduled to land at the Boars Nest on Monday but landed today.

    It contained a Wagner Dutch Oven, a #3 Birmingham, Stove, and Range pan (which is marked 5 5/8") and a 9" Birmingham, Stove, and Range pan. While the BSR pans aren't marked as such Benz tells me that the very distinctive V that's formed under the handle is the tell tale sign of a BSR product.

    I can't get a good picture of the inside of the lid for the Dutch but instead of having teats/tits cast into it it's got a concave in the middle. I've never seen one like that before. However with that said there were several Dutches all about the same size but many different brands and the lids were mixed up so we picked the lid that fit the best so it may not be a Wagner lid.

    While they are already quite clean I'll soak them in my lye bucket to get the rest of the gunk off and then see about having them soda blasted. I'm sure that my friend who has a glass bead cabinet is tired of my coming by to rent it.

    "didn't know you could make in cast iron"...there are things you can't make in cast iron? I literally only own cast iron cookware. (well, I have a seldom used instantpot).

    OH yea, sorry my reply was badly worded. That article title is still surprising to me though, like, it implies that the reader would think there are some things you cannot make in cast iron...is there?
