    My brother gave me another pork belly!

    I bought a "cheap" thermometer with 4 probes so I experimented with the 3 major thicknesses in the belly. I think I may have been overcooking the thin ones previously.

    These are the thinner ones that came up to temp first.

    Got my new billows and smoke X2 combo in the mail today (internet photo, I only bought one smoke unit) but I misread the power requirements when I ordered.
    Billows runs via a usb cable so I presumed one of my existing usb power adapters would work. Wrong. It’s a 12vdc output,, not the universal 5 vdc that usb devices run at .
    My bad, went back and looked at the site and they do mention a 12 vdc adapter required, which I misread.

    So the adapter is 10 bucks, but shipping will be 20 from the states, so I email the folks at thermoworks. Explain what happened and that I wanted to buy the adapter still but was hoping they could help me out on the shipping.
    Long story short, they are sending me the adapter, and extra usb cables at no charge and no shipping costs.
    Great customer service still from those thermometer folks in Utah!!
    Didn’t ask for that, offered to buy it, my mistake and all buy they exceeded my ask and then some..
    Great products, great service, great value., had to share.

    Less than two weeks until the wonderful day of Christmas so I'm getting the edible gifts done.

    Last night I smoked 6 lbs of Colby Jack since the temp had really dropped. I did still leave the door ajar to make sure the cheese wouldn't melt or even sweat.

    The bacon is in the freezer and I need to get my Smoked Kielbasa done and the edible gifts will be done.
