We were out of "real" bacon, so we used back bacon. Pretty good, I admit.

Boy, that looks really good. It reminds me of an acorn squash dish I haven't made for several years.
Halve & clean the squash, bake upside down at 350 in a baking dish with half an inch of water for about 25 minutes, dump the water, turn over and smear each one with a tablespoon of butter and two tablespoonsfull of sweet orange marmalade. Sprinkle with a few grains of salt and bake another 15 minutes.
Yum! The center is filled with a nice orange butter sauce to dredge each bite through. It's like a vegetable turned into a desert, in fact, it's how we got our kids to eat squash. Now they like it any which way.
Thanks for the reminder, now I'm off to the store to buy some acorn squash!

Agreed. Bacon does freeze very well.
There's a bit of background to tonight's bacon switcharoo.
Tonight, I found out bacon doesn't thaw quickly enough for a carbonara on-demand.
And when the missus comes home and says "Carbonara now," she means now.
Luckily, I had been playing around with these breakfast egg muffins, which required back bacon. The switch was approved by SWMBO, and voila.

Currently we have vappu aka Walpurgis night celebrations going on. So our daughter, grandson and wannabe-son-in-law came here for the dinner made by mrs Sailor.
Pork, potatoes, bataat, green things with goat cheese.

Finished it under the broiler for a few minutes to caramelize the marmalade a little. It was amazing!
