Prime rib and a good wine. No "moonshine" here. ;)
Gotta get myself out of this funk. I haven't posted here in a while, not feeling myself lately. But today's menu was rather simplified because I threw a pot of chicken stock on the burners today. So dinner was rather simple. I ate from the freezer, steak sandwiches . I Had a really nice skirt steak in the freezer vacuum sealed. I threw it in a water bath for a few hours and then seared it in a screaming hot skillet. Earlier in the day I made some oven dried tomatoes with a shot of thyme leaves. Banged together a garlic mayo and sauted some mushrooms in the skillet I cooked the steak. I slapped it all together on some bread I baked on Friday while my stock simmered.
Started off with and appetizer.......Tawney Port,Podda Classico cheese,Rye crisps, Sicilian Olives.

Main Dish......Caribbean style rice,Duxelle Crimini Mushrooms with leeks simmered in Bacon fat ,coconut oil and ghee, Pork,ginger,garlic,soy sauce and Cajun spice,Jasmine rice .......

Yesterday's dinner: Deboned a lamb leg, stuffed with garlic, rosemary and thyme, mesquite smoked on 80c/175f for 7 and a half hours. Last hour added some aubergine. Served with a sprinkle of truffle oil and an italian red wine.
