Enjoying some 12 year 9 month Knob Creek 120.
The smoothest bourbon ever. Never had any Pappy's but if it is better than this Knob Creek, it should be illegal.
Anyone thinking of going to Spirit of Toronto on the 5/6th of May? I'm heading down for it. Some very special whiskies on offer for tasting, and some interesting spirits overall.
My gawd this stuff is smooooth........ and the flavour!!!! What a great whiskey.

Also . . . Wiser's Dissertation, winner of Best Canadian Blend at the World Whisky Awards this week, is STILL on the shelves and a BARGAIN at $65.00 a bottle. No age statement, but all whiskies involved are a minimum of 12 yrs old.
It's not a 100% Rye. That's Legacy. The Dissertation is 87% Rye, and 13 % Corn. Still a damned fine dram.
Most of the American Rye's don't have that high of rye content in the mash bill.. Michter's rye, Pikesville, Knob creek rye, Woodford's rye dont even come close to that 87%. I think it was a mistake to not list it as a "Rye" whiskey, and a 12 year age statement. Nonetheless, people are talking about it and it's winning awards. I haven't even tried it yet! Haha.

Well, traditionally, ALL Canadian Whisky is referred to, and permitted to be labeled as, Rye Whisky. The word is synonymous with Canadian spirits. So much so that two of my favourite "ryes" are actually 100% corn. One even says "Canadian Rye Whisky" on the label. It is a quirk of our legislation surrounding spirits and labeling.
It's true. My wife's uncle came over the other day, and when I asked him what he wanted to drink, he said rye and water. I paused for a moment and said, "like.... just regular whiskey and water???" He said "Do you have Crown Royal, or Wiser's?" I smiled, and said "I have both." So I poured him Northern harvest. After a few sips he says, "This has a different taste to it... I like it."
Classic example on how the older generation still refers to all Canadian whiskey as Rye.

Here's another silly rule in the Canadian whiskey blending rule. Someone needs to put the kibosh on this. When one of our whiskies goes into a competition against other countries, with stricter blending rules, how can it be taken seriously with this in place???

I don't disagree. But, from what I have read, very few Distillers are making use of this "cheat" with their top-shelf bottles. Certainly not applied in the case of Dissertation, for example. It is a relic of times gone by, and usually is only brought up as a means of dismissing Canadian Spirits. For that reason alone, it should be stricken.
As to Ninety, it is a very nice whisky. The other is Canadian Rockies 21 yr old.
Also, keep an eye out for Den Bheaghan Islay Single Malt at the LCBO. Limited release from an independent bottler (Macleod) rumoured to be Lagavulin 8. Considering it's HALF the price of that bottle, it is QUITE good value.
Masterson's 10 yr old Straight Rye is quite tasty . . .

You should try Douglas Lang's Rock Oyster. It's a blend of some really high end malts. Lightly peated and priced really really well.

Been on the back patio and have had my 2L barrel staring at me. After the 48 day check, it still had a ways to go and I had decided then to go right to 100 days. Well, today is day 78 and I had to check. I'm impressed is all I can say. Smell, taste, and colour have all changed for the better. The nose has changed from jet fuel, to a mellower spirit scent with a lot of sweetness. The taste is the same. Initially very spirity, but mellows out into a very sweet finish. The oak is there, but not as strong as what I would expect from a small barrel like this. Everything on the internet says that it should be very oaky at this point, and it's not, which is a good thing. Maybe it's because it's been so cold?? Maybe things will start moving along pretty quickly now that mother nature has started to hit us with some days in the teens?? I'm going to continue keeping it in the fire place. Gives it shade, but it should give it those heat cycles from our cold nights and warm days to push it in and out of the wood. After 100 days, I'll probably start checking it on a weekly basis.

My brother got me one of those barrels, but I found that even after fully soaking it, it DRANK liquid at quite a rate. Now I just perpetually refill it with water and use it as decoration.
On another note, I just finished a dry Manhattan with Jack rye. It's pretty mild as rye goes, I think better neat than mixed, as the flavor doesn't really hold up.
I've read stories online of people getting real bad barrels that never seal up. Suppose I got lucky that I got one that did. Ive lost very little to angels share. If I knew then what I know now about small oak barrels, I would have made damn sure I got one that was hand made in North America. I've found 2 companies that make smaller 2 L barrels, one down south and one right here in Canada. I'm sure there's a lot more down in the US.

Had some fun adding drops of water and arguing about what taste was peat and what was seaweed, hehe.
Decided at 2 drops the toffee was washed out, as was the big heat hit.
Pretty damn tasty as far as I could tell.
Allow me to add to the debate. In many cases, especially when you are talking about maritime distilleries, the peat used IS seaweed.
