Not a Whisky this time, but summer will get here eventually, and a nice Gin & Tonic is always a nice change.

Oh, I know they make good stuff. I have one of their Great King Street bottlings. the Artist Blend.
***ALERT*** LCBO is selling the Pike Creek 21 yr old Speyside Cask Finish Whisky for $63.00 a bottle. That is $26.00 off the regular price.
Where did you see that? Their website still has it listed at the regular price.
Sandalwood Pkwy Store. Sandalwood and Kennedy. Went there for the Peat Monster (gone), and saw the sale. Couple other bottlings on sale, too, but this was the one that caught my eye and my wallet. If it's too far to come, I can try to get some Friday for you and we can arrange to meet.
Interesting.Obviously the individual stores put stuff up on sale if they want. I got a bottle of Stranahan's for a good price a while back.
Thanks for the offer my friend, but I really have too many bottles as it is, so I'll pass on your offer. I'm starting to get a few at the back that are unopened too. I'm currently saving for a bottle of the newly released Ardbeg An Oa.
Tonight, it's a dram of Aberfeldy.

Gentlemen, if you have a son, or nephew, or just a young man you wish to introduce to Canadian Whisky in the easiest manner possible, I have found the spirit for you. Quality, smoothness, and enough complexity to make them curious. Also a great value right now . . .

So Scott the 120 you need triple rocks? :beer1: just kidding, so the wood ford reserve your drinking over ice? By the way my friend I'm bringing a bottle, and Dave I'll go over this week and get our case. Tc
It's a toss up this weekend between Eagle Rare 10 (the BTAC lottery started at the LCBO) and Compass Box Great King Street's artist Blend, this weekend.
Your choice, fellas . . . speak up.
Something of a beginner's Scotch this weekend.

Going to age some local 100 proof moonshine in a 2L oak barrel. Been swelling it up for the last 3 days with water. Tomorrow morning the good stuff is going in, and then outside into the shade to get all the expansion and contraction the elements can provide. I hope this goes as well as I'm thinking.

Roy, the barrel comes with a medium char already done on the inside. One thing I've read about these little barrels is that they have a larger surface area. (A greater wood to liquid contact ratio) than the larger, traditional barrels the pros use. It'll take a lot less time to achieve "whiskey." So I need to constantly check, taste, to see how it's coming along. These smaller barrels run the risk of over oaking the liquid.
Back in the day when I worked seasonal field work for Green Giant Co. There were some guys who came out from Tennessee to work pea harvest, the only name I remember is Charter Dole as he come west year after year.
They would bring shine out and it was indeed fine shine! I remember Charter saying that you could char up some oakwood and put it and some shine in even a gallon jar to age and you'd get some good whiskey.
Sounds like you're on your way!
I've read that too Roy. You can actually buy char'd oak spirals on amazon and other sites for that very thing. But you could literally take some clean, scrap oak and giver a roast with a torch to achieve the same.
I can hardly wait to take my first nip at this barrel in a few weeks!!!
I would be surprised if a few weeks would make a noticeable difference. Why did you swell it with water. Now you have the wood full of water. It is the movement of the whiskey in and out of the barrel and char that makes the difference.
Well because they leak like a sieve if you don't.
Well with the mass produced barrels that's more than likely very true.
However if a Master had made the barrels they probably wouldn't leak from the start.
This is rather long but I have watched it time and time again. I hope all will enjoy seeing how it can be done. If you get bored, just go to the end and see the proof in the pudding.

You guys are talking my language now. A fast way to oak some "clear liquor" is toasted oak chips. 2 cups of Jack Daniels oak barrel chips toasted and 1/4 cup of maple in a half gallon for a month or so will give amazing results. I will try to post some pics later. I have also found it pulls more color and taste at over 110 proof to 125 proof. Slower at 100 proof.
On making your own toasting chips: roast it at 375 ti 400 F for an hour, then take a torch and toast/char it light, medium, or heavy.
This is fun.

I wish I could have found some higher proof fuel, but 100 was the highest. I've watched some vids on guys oaking. It matches up with what you're doing. I may try it in the future. Wonder if any of these smaller distilleries would hook me up with a few litres of high proof.....
I just looked this up in a book that I have been slowly reading over a few months. Set it down for a few weeks an then read a few more pages....
Bourbon Empire by Reid Mitenbuler.
"Small barrels increase the surface to volume ratio of wood to liquid, speeding up the extraction process by quickly adding color and flavor but shortchange the other parts of the aging process that require more time."
I am not going to look it up now but the distillers got a law changed in their favor that only got them taxed on the final product that came out at the end. Maybe 40 gallons from a 50 gallon barrel.
There is much that gets lost to the angels. [evaporation and leakage etc,]
I am expecting to lose some to angel share.....I just hope not too much.
An update for you guys...if you try the chip method, check your product every day after week 1. I may have over oaked about a gallon. I eill proof it down to 95, maybe that will help.
