I usually don't have a protractor nearby when I shave so I can't speak to those angles, I go with what feels comfortable and what gives results.
Why doesn't the taco truck drive around the neighborhood selling tacos & margaritas???

Hehe... I thought it was interesting to decrease the angles through the passes.
I've been trying to improve my technique and have been laying it nearly flat lately. Nice shave and zero aftershave burn... but it grows back quickly.
Last shave I attempted this technique but second pass was distracted and went ATG but with less angle then finished with XTG with nearly flat. Minor burn, bbs and minimal irritation.
My thoughs are, flatter the better in sensitive areas. It makes sense to me, to go flatter on subsequent passes as well as the first exfoliation has occured.
    Meh... maybe I'm overthinking.

A good indicator for your technique is to apply Clubman Pinaud afterwards, minimal burn and you're good to go. If your face feels like it's on fire then you'll want to adjust your angles a tad.

I am not sure there is that much of a range in my shaving angles. I think they are mostly fairly low.

About one spine width off the skin is where im at now days. No irritation and a good shave but i can never seem to get under the jaw line bbs. So i gave up on bbs and am happy with my results. My whiskers are grey anyway so no one can tell if i didnt knock them down 100%. Only my hand can tell and only atg so its ok with me. Different angles for different directions seem like too much thinking while shaving. I enjoy the shave with 2.5 passes. And on the weekends when i go 1.5 days between shaves its nice to cut longer whiskers with the same amount of passes. Shows i must be doing something right.
    It's just Sharpening, right?

I do change the angle depending upon which area I'm shaving and which pass. This adjustability is one of the reasons I use a straight razor. The ultimate adjustable razor.

That's what I was curious about. Seems like changing the angle makes sense. I wonder if was old news, new or if most people just don't bother. First pass aggressive, then ease off or gentle in sensitve spots.

I think the diagram is over simplified and a guideline only. The growth on most peoples faces is multi directional so you really can't say the north south pass is WTG and use a 30 degree angle. So I compromise and compensate by doing a 4 pass shave with the spine about 1 spine width from my face. The exception being going south to north just under the jawline where the blade is near flat on my face. There is a fine line between just cutting the whiskers and cutting and scraping your skin. The wider the gap between face and spine the more scraping which can contribute to more irritation.

You just have to experiment to find what works for you.

I usually don't vary too much now. I seem to have settled on what's comfortable for me. The only thing I would say is if you have a wedge watch out for a bit of suction if you get the angle too low. I don't actually have a full wedge, but I have experienced this with a quarter hollow.

Not sure how to explain it really, but when the blade is flatter to the face the gap gets filled with soap and seems to stick the blade to the face. Maybe it's just me, but I tend to watch those shallow angles now. As others have said I find about a spine's width is the sweet spot for me. A light touch is what makes the biggest difference but YMMV.
