I assume you mean the .5 micron. That paste is fine enough that I can do a few swipes as routinely as stropping, without concern that I might be hurting the edge.
When I'm refreshing an edge, I stay on the .5 as long as it continues to add sharpness. As soon as it stops, I move on to the .25 and do the same. It makes a difference.

Well this morning I tried the one pass all over, then re-wet & re-lather for another pass routine suggested here by Joe above. It is working well. I find that using this method, I can make a more strokes without tenderness. Granted I am ultimately covering each area the same number of times to get smooth, it's just I end up not making a second pass in any given area without re-wetting and lathering. I hope this makes sense. It has improved the overall shave, albeit a little more time consuming. But then again this morning was the first attempt at that method. Again I appreciate all of the advice, and for the first time in a long while, I am making tangible progress.

Actually, it may be the same number of passes but the timeing is critical. Counter-grain passes on long whiskers are very irritation prone. You can take them on slight stubble without a problem.

I still don't go against the grain very often. I'm getting bolder, but for a general shave I just go with, with and a little across, across, then water based touch-ups as you recommended. It's not baby butt smooth, but it's close enough for now. I know I could probably save strokes if I went against, but I'm trying to be patient. Baby steps, as it were. I want to get better at this first.
