Here is a post outlining how to correct a heel. The heel is where the red circle is, just use a coin or washer to draw a curve that will move the corner where the straight edge ends ahead of the stabilizer.

I forgot about getting a picture until now. This was what my Granddad used to sharpen his knives, so I assume they are fairly course. It is finer on one side than the other.
