    This is my absolute favorite way to make eggs, by using a cooling skillet it produces wonderful chiffon like ribbons of eggs when combined with the cool refreshing taste of fresh tomatoes. I absolutely dispise the clumps of overcooked rubbery blandness typical of most restaurants here.

    lately it has been pretty much the same wat for me, fried in a nice layer of golden butter, about 5or6 over medium, loaded with fresh, coarse cracked black pepper and some ground sea salt.

    Not necessary if using a large iron skillet, but if using a smaller pan or a lighter one it's not a bad idea. I like to bring about 3tbsp of olive oil right to smoking then add the eggs. Enough eggs to just cover the bottom of the pan, 3-4 eggs for a 10" pan.

    HAHA, too funny! Its all good, though. I live right smack in the middle of the San Joaquin Valley, some of the most fertile farm land in the world. Hard to beat fresh and local produce. My wife is a chef, I am a food fanatic and really love to cook. I'm not a hipster, but just really enjoy my food!

    I saw this method on a cook show- Crack eggs into pan and when whites are almost cooked,slide in 3-4 tablespoons of water and cover for a minute or until the yolks have a white haze on them. Almost like poaching but different,

    Sunny side up with a saucepan lid over the egg to whiten the top of the yoak works for me

    I've done that,it works pretty good.the whites get a nice white haze just like you say and the yolk is mmmm runny golden goodness. Today I did it up Brit style with Germans.Meaning 3 bratwurst with some fried mushrooms and grilled tomato,two eggs sunny side up,fried German rye bread(real rye) and tea milk n sug (in my case agave nectar)trying to cut down on the white refined things.

    Wow! A blast from the past this morning. This was a pretty standard weekend breakfast and anytime sandwich snack when I was a kid. Haven't had one for years and I ate two of these this morning that were wonderful:
    1. Put two pieces of bread in the toaster
    2. Fry two pieces of bologna
    3. Place toasted bread on a small plate, butter it quickly so the butter melts
    4. Place fried bologna on the toast.
    5. Put a piece of American Cheese on the fried bologna
    6. Add a tbs. or so of margarine to the skillet. Fry an egg adding salt,pepper and several dashes of habanero tabasco to each side
    7. Add fried egg to sandwich and close it up. Enjoy!

    Yummmmmm. That sounds like a really nice breakfast or lunchtime sandwich. I'll have to try it one day.

    So I got all the makings again for a passable full breakfast.I got sausage,eggs,tomato and mushrooms for fryin up,some good artisan sour dough bread fer fryin up and some good baked beans. Also some milk for the tea. I love egg'es and I like this thread and it's making me fatter each time I read it. It all reminds me of that scene in the Lord of the rings where they start discussing First Breakfast and then second Breakfast etc. Breakfast is the bestest meal of the day and if I had to eat one type of daily meal for eternity,it would be breakfast.There are few breakfast foods that I don't like. BREAKFAST !!!!!!!!!!!!!! YES !!!!!
