I tried MC's technique on some kitchen knives. It was OK but like Marshall said, why create a burr and knock it off when you don't have to. I learned to hone about 45 yrs ago and my method works fine. If MC's method works for a newbie, good for them. They might save the hundreds of hours that I spent scraping a Hard Arkie wondering why the knife didn't shave yet!
