My brother makes his own choco and pepper combos. I like the yellow scorpion habeneros w/ chocolate and the chocolate habeneros w/ chocolate. Also, the ghost chili w/ chocolate.

My first trip to France in '99 was for the Coup du Monde in Lyon. I went with a group of chefs from the culinary school I was attending at the time. While there we visited Bernachon. It's probably the finest chocolate I've had thus far.

Ten years later I went back to France with my now wife and discovered Michel Cluizel. His chocolate strikes a balance of flavor unlike any other I've had. Not as bold as Bernachon but balanced and elegant. I don't believe that Bernachon is available via mail order to the US but Cluizel is. If there is a special occasion coming up, this is the stuff to have.

Thanked: 36I was offered chili chocolate at a friends house a few days ago and they warned me to be careful because it was so strong. If they hadn't told me it had chili in it I don't think I would have noticed. I quite like the chili chocolate truffles they sell in a coffee shop near where I live. The heat holds off just long enough for you to say "It's not as hot as I was expecting" before exploding in your mouth. Very cheeky.

For one they have changed the recipe.
There is a grocery chain in our area named ALDI, they carry several brands of the German and Swiss types of chocolates and those bastards have the audacity to display them right at the front door where you can not ignore them. The grocery list makes abrupt changes every time. 70% or 80% cacao, mint or pepper, hazelnuts or almonds? There goes a twenty dollar bill just on chocolate. Good stuff. I don't know the german aldi is fairly different from the ones in US. When I was a poor student in germany I was quite partial to their store brand 'JA' for 99 pfenning per 100g bar (about 50c/3.4oz).
May be I should take a picture of what's in my desk drawer - it's like a dozen bars from the chocolate shelf at wegmans - scharffen berger, lindt, chocolove, vosges, santander...
The aldi mention means I'll pick a toblerone tomorrow - I don't really care for it, but it's like the eurotrash of chocolate
