    Ordered my kamado bbq today.
Went with the pitboss k24. Lifetime ceramic warranty and a two tier grilling rack that provides 662 sq inches of grilling, smoking, searing, baking pleasure.
Reviews were all quite positive, and it was half the price of the XL BGE.

Going to be a long wait till it gets shipped, but the spring bbq season will start well.

Decided this style would be the most resilient to the crazy weather changes we deal with up here.

Ya when I thought of all the grills that have rusted out and broke down, I don't think these type will ever burn out. That's an incredible price, wish I had looked at them first. Might have gotten a bigger one. They look like they are the same in construction, anyway good for you Mike these things work, Tc

Well the weather is slowly getting better which means that I'll be busy doing outside things like riding my Harley

So I decided I'd better get some treats and other smoke cooked meats done.

Here's a chunk of pork butt/shoulder after a week in the brine. Not very appetizing is it?

Here it is in a ham bag along with some beef ribs that would be my supper.

I hope it looks a bit more like something you'd enjoy having on your plate.

Since Chinook Salmon was on sale for $8 a pound and the pre smoked stuff is around $2 PER OUNCE it was time to cure and smoke some more salmon.

Here's about 8 lbs of fillets after scrapping the scales off (the one and Only thing I don't like about smoking salmon) and then rinsed and dried in the towel.

Half of the fillets with the dry cure on them. The other half will be but on top and weighted down to help form them into nice shapes.

Out of the smoker, cooled down and ready to be cut up, packaged and put in the freezer.

Well after doing some research, and going to Costco yesterday during the traveling roadshow for Kamado Joe, I have decided I wanted a full size Kamado. I bought the small Big Green Egg, and it's built like a tank, but so is the Joe, and they knock off 400$ for the show plus give and extra 250$ worth of accessories. I just needed more room fr big dinners. Tc
