Thanked: 4206Started the new year not wanting beef, or bird, so went with a pork dish based on bacon last night.
Porchetta for three.
Pork belly filled with seasonings and rolled up fat out. Cooked at 400 for 90 minutes, tented with foil, then up to425 for 30 minutes to turn the bark into candy.
Looks almost healthy huh??
So good,, and a great way to use up any leftover cranberries from last week.

I used to fix a dinner but I've found that this way everyone can come and go as they please. My youngest daughter wasn't feeling well so she and the two kids didn't come so I'll be taking leftover to her.Our house is as Neil left it- an Aladdin’s cave of 'stuff'.

I made a command decision before Crimbo.
I dont take my sugar in the morning or weigh myself until either the tree comes down or the goodies run out.
Problem is I opened a bottle of Southern Comfort Christmas Eve and I'm finishing the last of it right now, tomorrow we're shopping so another bottle is already on list- - Steve
You never realize what you have until it's gone -- Toilet paper is a good example

Thanked: 4206Tried a go at pistachio macarons today.
Fresh roasted pistachios for the meal.
Folded into the meringue.
Home made ziploc piping bag made emoji poop cookies rather than circles, but what the heck. They rose nicely.
And with a home made pistachio butter cream center, no complaints from the family.

My those look good enough to eat! Hehehe I bet that they taste wonderful, too bad I'm so far away.
When I was a kid the only pistachios that were available were dyed red. Here's a read---

Yea, they were called Red Skins, not PC today I reckon. However you could get some without the red dye.

Once during the winter I bought some red ones and wanted a snack on the way home. I turned the heat up and cracked the window a little so I could spit the shells out.
The next day I relaised that that was not the best choice.
The roof of my cab by the window looked like it was covered in blood splatter.
