    Thanks, I bought the teapot for Mrs ed we have cups and saucers, side plates, sugar Bowl etc to match, it's a range called kimono by maxwell and Williams.

    Right the recipe is:
    8 oz dehydrated apple
    2 cinnamon sticks
    4 whole cloves
    6 cups of water

    Bring all to boil, simmer for at least 15 mins.
    strain into teapot gently squeezing apples to extract the liquid.
    add honey to taste.
    Serve.
    Bread and water can so easily become tea and toast

    Default Tea anyone ??!!

    My first shincha of the season:

    This Kagoshima cha from yakushima is fairly interesting as it's only ever sold as shincha, hence being packaged as such, and is only available in limited amounts.

    It wasn't overly expensive and this chūmushicha is light, floral and somewhat citrusy (this autocorrected - is it even a word though?).

    I will need to try it a few times before I get the right brewing parameters but it's a nice tea to start the season with.

    Organic Wulu Jade Green Tea. What a wonderful, smooth, low astringent, sweet, nutty, clean and crisp tea. From China’s Hubei province in an area called Enshi, Wulu Jade Organic tea is produced once each spring in a limited supply. From the high elevations in the mountains, Wulu Jade is imbued by the misty air and clouds particular to this region. With a vegetal cucumber flavor and a sweet chestnut finish, the aroma is toasty like sweet roasted chestnuts. Lovely and refreshing.

    You know I have really come to enjoy a good Ceylon tea. Assams are good but can be heavy I have found and when I do heavy teas I prefer to have them sweet and Milky now. Otherwise I love Ceylons black with a little sugar.
