Nordic style is not spicy for one Paco. They use more lemon and dill as they're flavorings,Fins,Swedes,Norwegians all have similar style to this way. I used to have a sort of Bar owner boss who prided himself on being the know all cajun food king(NOT) and He would always ask me to cook his Cajun food for him for Mardi Gras here in Colorado. Like you I would throw in suasage,mushrooms, Bugs,corn ,potatoes whatever even made my own Cajun seasoning, and he would always try to torpedo me and say "That's not how they do in in New Orleans" ....Errgghh.....so agravating.

Well, spring has sprung. Sometimes you go to the market looking for something specific and your whole game plan goes out the window because you yield to logic and buy what looks best. That was this evenings dinner - roast chicken, fiddle head ferns, fresh morel mushrooms, ramps, and a tarragon jus.
