I could name them, but if you like sushi then you prolly know that names are relative. All were amazing! And it is a shame this location isn't near my home.
I have been on a slow smoking kick lately.
Here is last Sunday's entre
Dry rubbed, bacon wrapped pork loin, stuffed with a sausage and wild mushroom dressing and slowly smoked with hickory.

OK so family ate no left overs and it is what I had a hankerin for
Egg's, Greens, and thick cut Bacon dinner is served.

Are them there, turnip greens?
I never cared for turnip greens, but I love collard greens. My grandfather was the King of Collard Greens. I spend many of my summers cutting collards in the fields. We hit the field by 7am & usually had the order on the road by noon. I worked the field 4 days of the week & we fished the Gulf the other 3 days. Fishing on his boat was my reward for helping in the field. I learned to sharpen knives in the collard field.

My wife and daughter came up with these tonight.
Redneck Turtle Burgers Recipe | Just A Pinch Recipes
A little Dill Pickle and chile salt and lemon made them perfect.
P.S. They used ground pork and venison instead of beef.

Not sure I could deal with the feet hanging out of the burger though.
The hot dogs add to the visual but detract from the taste!
But we are gentleman and don't care about the taste. :)

although the temps have been up around here , we have finally been getting much needed rain . with the rain came colder temps but it couldnt keep me off the grill ..lol
peppers /onions/ thin sliced beed marinated in a bunch of stuff and raspberry vinaigrette
and some chicken marinated in lemon juice/olive oil/ garlic / inion & pepper

We fished in the Keys. Mostly we launched from a ramp, that is not really marked, on US1, halfway from Florida City to Key largo. It is the only ramp there, I believe, before Key Largo. We would travel a few miles , then hit the mangroves for snapper. We used a cane pole to "snatch" the snapper before they pulled our lines in the twisted mangroves. Amid the mangroves was a spot we called Trout Creek, known for the abundance of sea trout.

So what do you do with a years worth of saved up bacon grease?? You fry up chicken soaked in buttermilk,dipped in flour with secret family ingrediants,you make homemade cornbread, fried in bacon grease,you make mashed taters.

@Paco, that looks like some kind of feed, brother. Knowing Cajuns as I do, I'm sure the beer was plentiful and plenty cold and there was likely some good music too.
One mans bait is another mans feast I guess.......I love crawfish,cajun stryle or nordic style and I love chicken livers either fried or used for dirty rice. I'll stick with the velveeta or breadballs for the bait.In Michigian I grew up on smelt fries and yet people only think they're bait as well. Go figure.......:thinking:
