Spent about 3 hours odd so far & finally have all the 80 grit lines out of the tang and spine side using 220 grit I recommend some thing coarser to start with

It's hard to say from the pics, but those knives look pretty roughly finished. You always have to watch if there are sharp corners or partially folded over tears. Sharp corners provide a very convenient place for cracks and tears to start. The thermal shock can sometimes literally rip a blade from a tang.
Water quenching is by definition more violent than oil quenching, so for kitchen knives I started preferring oil steels. Something which is long and flat such as a kitchen knife has a higher chance of warping in water or brine quench.
EDIT: Did you anneal the knives first before quenching?
Yes, I brought all the blades to critical and let them cool to ambient air temp before applying clay to them. As soon as I quenched them all they were tempered. After temper I ran them all over a synthetic 180 grit water stone and noticed the crack. Will post pics of it later. This blade also warped a bit too.
Blades were not rough at all, were finished to 240 grit, razors to 400. Razors did well...
My apologies. The knives, are they the ones on that wooden plank? I thought they looked rough but the pic isn't that detailed. Was this after annealing? Then it could be it is the scale I mistook for hammer marks?

here's my last work, a ring for my daughter (wenge, brass, artificial pearl).. since razors have been on hold lately, I thought I'll share this (and not get killed for it :D) , it was a pain to work with since it is rather small (the finger on the pic is my pinky finger)
