We freeze ours. Blanch to remove skins then pack in vacuum bags and into freezer. Less work but doesn't last as long as canned. We make sauces for pasta mostly with ours.

Exactly what pixel says. We scaled/dip the tomatoes in boiling water for 60secs. Use a colander. Core and skin maters if you wish, Gets more into the jar.
Use tongs to dip jar in hot water, A funnel and a magnet on a stick helps. One for hot maters in jar, two is for picking hot lids out of water. Just that simple.
Shout if you need anything.
Nothing beats your maters in the middle of Winter. Flavor blows Walmart off the map.Your only as good as your last hone job.

So here is Pizza from the garden. Tomatoes, Zucchini ,Onion all home grown. Taste priceless.
I grind up chocolate mint I grow and make my own Ice Tea. I cut it down and run it through the blender. Squeeze out all the oil and water.
Freeze and break off chunks to dilute with honey and water to make Homemade Ice Tea.
