Yes that one turned out nicely. It is Turkish Twist Damascus made by my friend Ed Schempp.

These are the 2 kitchen knife blanks I made in 1070 steel.
Both were edge quenched only, without using clay. This is why you see 2 lines: the top line indicates the line up to which the water level came. The bottom line marks a breakdown of the martensite due to heat leaching back into the blade after I removed it from the water after a couple of secs.
If you look at the slicer knife, you'll see white stripes. These are not scratches. This is where my belt work hardened the steel. I ground that blade with a worn belt. The santoke doesn't have these lines because at that point I switched to a new belt.

Thanked: 1936With quenching them in water, they should be around 60 HRC shouldn't they? Did you free hand the quench or have something to "stop" submersion at a predetermined depth?

Freehand. I held the blade with the tongs holding it more or less orthogonally so that I could lower the blade in the water bucket horizontally and then submerged the edge for about an inch. Held that for a couple of seconds, pulled it back out for a couple of seconds, and then quenched it slowly, point first, to minimize the shock.
