Do you hold it like a barbers hone when you use it for better control?
I would want a piece of leather in my hand just in case a finger got in the way.

That's an awesome Escher, Gary, nice! I am trying to get one right now for cheap, to please the HAD! I would ask Sham about finishing with the Escher he knows about them more than anyone else I can think of. I believe he always uses Slurry stones to build up lather on the hone. The amount of strokes he uses I am not sure about. I know he likes to use a lot of time on final edges (you can watch his honing videos where he has like 8 Eschers lying on a table with a zillion other hones all spread out, it's awesome).

I also have a Thuringian. I think it's ok. you get nice edges with this stone.
