    Followed some tips from an Irish bread maker and did my initial proof of 3 hrs last night. Then knocked it back and formed it,, and let it prove overnight in the fridge for 15 hours in a covered basket. Baked it after work @ 450 covered for 25 minutes, then 25 more uncovered. Ready in time for dinner.
    Used a blend of all purpose and atta no1 fine flours.
    Great flavour.

    Great stuff those two..
    $1.50 an hour,,,, even I started at $4 part time when I started work in 78.

    When I started with Safeway in '79 I was started at one notch under Journeyman and I 'think' it was $6.80 or so an hour and 3 months later I had Health, Dental and Vision coverage. Washington State's Minimum Wage was $2.30 an hour. So I was making around 3 times MORE than minimum wage.

    When I left Safeway 36 years, 7 months and 6 days later as a Journeyman I was making $15.50 per hour and minimum wage was $10.00 an hour so I wasn't even making double of minimum wage.

    All three of my kids have worked at Safeway and I told all of them I didn't want them to ever consider making a career there. None did. My son did work for Safeway for about 3 years and I kept telling him that there were better jobs out there and to keep looking.

    He finally got a job with Key Industries. They stated him at $18.50! $3.00 more than I made after busting my ass for over 36 + years! He also had full benefits after 3 months.

    Oilfield started on a rig ‘75. 2.75 an hour. Earned every penny back then, then somewhere around 1985 it got kinda crazy and wages went sky high. Roustabouts doing grunt work making 90 k a year, drivers 110k. Drillers on new rigs making 160k. So my pay did go up from the start. Got me a job at the Harley parts counter 2 days a week, they offered me 15 an hour. Can’t even make enough to pay for what I bring home

    I started working in a Department Store while I was still in High School. I got minimum wage which in 1964 was 1 buck an hour.
