    Default Hot Sauces

    I currently have about 150 different hot sauces. I used to have three times that. I actually won a blue ribbon at a big fair in Connecticut with my hot sauce collection. When I moved I didn't have space for them all so I kept the most interesting and gave away the rest. What I have now:

    I love hot stuff but I don't use much more than good old Tabasco. It's funny when people find out you collect something, or even if they think you collect something, you can quickly become inundated with that something. I began collecting hot sauces at my last gig working for a large medical device manufacturer. My position had me travelling all over the country visiting hospitals. Our entire sales force began saving hot sauces for me. They learned to always get me two of each, one to eat and one for display.

    The only ones I really don't like are the super hot sauces that contain pure capsaicin (the label says "pepper extract"). These things are made n a lab, not a kitchen and aside from being dangerously hot, they tatse absolutely putrid.

    Wooow, cool collection!

    I love hot sauce, usually use Tabasco, or Heinz. Louisianna hot sauce too. I'm in the process of lerning how to make my own. Just peppers, salt and vinegar.

    I am a hot sauce freak my self. I don't collect them but I sure eat a lot. and your right the supper hots really have little to do with food.

    Mmmmmm hot sauces. A spice junky myself.
    A stand by favorite is Sriracha Hot Sauce, I think
    I'm only a few steps away from putting it on my
    cereal in the morning. Goes bloody great with
    everything.

    Here's my special Tabasco section:

    The sauce is all made in Louisiana but the labeling is in the languages of many other countries. I have Japan, Germany, Italy Spain, France, Portugal, China, Belgium, Greece and more.

    Impressive collection. I love hot sauce, but I don't think I have ever had more than 7 or 8 bottles at any given point. I need to avoid HSAD.

    I love spicy food.
    I often do tabasco in my soup.
    In sauces / dishes I often do cayenne pepper.

    When I am cooking I usually don't use tabasco, but ground chili peppers from a jar.
    For stir frying chicken I usually put a big tablesoon of ground chili pepper in some oil, add a red onion which is cut very small, add the chicken and then let everything sit in the fridge for a day before frying it. hmmmmm....

    150 different hot sauces is quite a feat. I didn't know that so many existed.

    We affectionately call this Rooster sauce, mainly because of the bottle. Really great on pizza.

    If you have a specialty chili-head store near you, look for a product called Pure Cap. It's 100% capsaicin extract, the chemical that makes peppers hot. My friends picked up a bottle for me for a birthday gift, and had to sign a waiver to buy it! It is pure heat with no other side flavors.

    My favorite really hot sauce is something simply called "Pure Habanero" that someone gave me for my birthday.



    It had a deep, sweet flavor and a rich aroma that I could put on almost anything. I took it to Pizza Hut where I was working and someone dropped and broke the bottle. The entire restaurant filled with noxious fumes, heh heh... I miss that sauce.

    I like Sriracha on rice, but that's about it. Blair's Sudden Death and Dave's Insanity are ok, and someone introduced me to Marie Sharp's from Belize - the whole line is pretty good. There's some green habanero paste at the restaurant down the street that's pretty good too

    EVERYTHING is better with a little heat! I eat a lot of Thai and Vietnamese, so I usually have the sniffles when I'm eating. I definitely find hot sauce to be a staple... whether it's Frank's on pork skins, Tapatio on nachos, or green Tabasco on chili. LOVE it!
