    well my wake-up pot of ta today was a home blend. i didn't have quite enough swan for a full pot, so i threw a scoop of lapsang souchong into it. steeped it for a minute and a half, and surprisingly it turned out to be a very flavorful pot of tea. Phil, you should try it, you get the smoky flavor without the overpowering aroma that drives your wife nuts.

    Iced tea home made should not be stored too long in the fridge as it tastes better if you use it within 24 hours of chilling.

    There are probably many more things I've yet to learn, but those are a few of my recent epiphanies.

    I got the ice tea down. I make a fresh pitcher everyday and it's gone before the next one. My favorite brew is sun tea although I never measured the time I just looked at color to decide when it was done. I haven't done that for some time but this summer I will. Slow brewed tea is like slow cooked meat. It just makes the buds happy.

    I believe that making tea shares the same principals as creating lather. I'll leave you to think on that.

    Also, that was an awesome photo. I may take a few of my own, tomorrow.

    Seeing Bela's "Billy Tea" photo reminded me of Dutch Oven cooking. I want to get a couple for camping. Below is a set up of a guy I know up the hill a ways. The things he can cook amazes me, best bread I've ever eaten came outa one.

    That's the tea brand Phil. I carry the loose leaf stuff in the pantry. As for how an Australian tea would go with that very english pudding...I don't know. The Australian (and Welsh for that matter) in me would kick in and prevent any kind of dick from getting near my mouth. Best left to the english perhaps . Now I had better go take cover from all the flack I'm about to get .
