Thanked: 983Just like pancakes except they are sweet rather than savoury. Done by adding sugar to pancake mixture and using a rising agent or self raising flour instead of plain, non rising flour. Sugar is optional, but traditionally it is added. Pikelet mixture is thicker than pancake mixture and you end up with a heavier, fatter 'pancake'. Pikelets are also usually about the size of the US 'silver dollar pancake', about 2"-4" dia. but can be made as big as you like.
Toppings for pikelets are fairly identical, though usually savoury toppings aren't added. Butter, Jam, Syrups, Honey, Lemon and Sugar, Whipped (or just suitably chastend ) cream etc are fairly common. Pikelets are eaten hot or cold and make for a nice breakfast, morning tea (snack) or afternoon tea (snack)...Anyway, here's a link to a recipe that is exactly how we make them here at home... Another trip to Chico Ca today! I stopped in at the House of Rice, Oriental Import place. I've done so much shopping online, it was nice to go into a good ole B&M. It's a great place, typical insofar as any family owned Japanese and Chinese import place, enough square footage for 5k items, but containing 25k items for sale. All I needed was some Furikake and some Vinha d'alhos mix. Yeah, the only place I can find this Portuguese stuff is right next to the Furikake, something to do with Hawaii I think. Anyway, this place is a visual overload of the best kind. Went in for two things, found the tea section, never thought of looking in the place for tea stuff before, yeah, I'm that dense sometimes. Seventy dollars later, I left! Thought I'd try out a couple things, this cool, and bonus round for me, cheap-enough-not-to-cry-if-it-breaks, teapot, and the bamboo tea scoopy thing. Tested it out with some Bouquet de Fleurs #108. The 750 ml pot is perfect to fill the travel mug in the picture two times.

Tonight I decided to make gumbo from scratch for the first time. It ended up very good with a cup of earl grey. An odd combination. But very good
