Nosey,
I see you using rock sugar. Is it just sugar in chunkier form, or is there more to it than that? I'll use raw un-washed sugar once in a while, it has a slight hint of molasses, and imparts a bit of that to the tea. Which reminds me, I'm running low on it!Silence is Golden, but duct tape is Silver.

Brown rock sugar you say?? Now that perks my interest. Not so much for tea, but in BBQ applications, that gets my fertile mind clicking. I can say no more, I am kicking around starting to do some smoking events this year, don't want to divulge any info to potential competitors. Ha! I wonder, anyone on this board a KCBS member?

The last raw sugar I picked up was a bag I found in the little store I go to, they usually don't carry it, and it was from C&H. Not the fancy, triple the price, "Sugar in the Raw" stuff. For C&H to receive it raw, process it, then un-process it, well; I guess they could. On one trip to Maui, we had some time to kill waiting for a flight. So the kids and I went to the Alexander & Baldwin sugar museum. If you have the time, kids that will put up with some, not too exciting stuff; it's really neat!! If you want to know the process of growing and making sugar, it's a must do.
