    My Uncle Frog (Don't laugh, that was the only name I ever knew him by) may he rest in peace, taught me how to make gravy when I was a kid. After taking out of the pan whatever had been cooked, usually steak, but bacon or any other meat he said could be done the same way. he added in some water and scraping and stirring, mixed in the remnants, a little salt and flour were then added to thicken the mixture. And this sounds a lot like your red eye gravy without the coffee. I might have to try it the coffee way now, just to compare.

    i actually do prefer Earl Grey Tea vs coffee...but for some reason i mostly drink coffee and the earl grey only pops its head out during the winter.

    Thinking about it now,this would explain (at least partially) my dislike of being in close proximity to bird's. English seagulls are the bird equivalent of scaberous 18th century beggars. Don't know why 18th century particularly but I think its to do with the clothes, heavy woolen/ canvas / sackcloth in varying shades of filth, along with missing eyes and feet is what does it I reckon.
    Edit - not that seagulls wear clothes, but if they were human, that's what they would wear.

    Just remember, go easy on the flour...it's suppose to be more like an au jus not super thick and the coffee should not over power the ham flavor. You've had a French dip sandwich right ? The gravy should be about that consistency, not water and not glue. It really is good stuff........ off to do errands see in the field soon.

    Edit - not that seagulls wear clothes, but if they were human, that's what they would wear.
    Clothes back then were better made than now and sturdier....and had a purpose. Now prosthetics...that was a different story for sure. Can ya spare some cotter me brother !? Alms for the poor..........

    I think clothes still have a purpose Mr N, well unless you work from home and only internet shop. Now I have a clockwork orange in my head thanks to you asking if I can spare some Cotter me brother.

    I enjoyed that movie too, having young children around is good, you get to watch stuff like that, plus stuff you watched as a kid.
    Yes like rats, big ugly, patchy haired rats, catsized. Sort of like Oliver Reads Bill Sykes in the movie version of Oliver. Pidgeons are more like the more scabby of Fagins kids.
