Showing my ignorance but why would a higher vacuum make a difference?

The greater the vacuum, the greater the pressure. If the contents are fragile, it will crush them.

Most prefer not to have the leaves broken up as it leads to particles floating in the tea itself.

I have a tea that is hand picked. It looks like regular tea, all dry and crumbly, but after it is steeped you can see that the picker took care to grab one leaf and the top shoot, each and every time. It is a lovely tea, and has been treated well all the way from the field to me, the end consumer. It is clear proof that I am getting the top quality tea, and not the floor sweepings. While this particular tea may be exeptional, you can learn a lot from your tea by checking the used leaves. It may sound strange, just something us tea lovers like to do I guess
