Pu Erh comes in 2 "varieties" (ripe and raw) and they are prepared somewhat differently. Both use around 5-12g tea to 4-8 oz of water (125-250ml). The water is prepared, then poured over the leaves and then quickly poured out. This prepares the leaves and rinses any impurities present. After that the tea is steeped, usually very quickly, 5 secs is often the preferred time for the first infusion. If the pu erh is raw or unripe, the water should be 160f or thereabouts, ripe pu erh can tolerate temperatures a little higher. This is the traditional chinese way or preparing it.

Received a bag of Keemun tea from one of our group here yesterday. I've never had Keemun before. I measured out 5g of it and put it in my Gaiwan. I let it steep for about 5 seconds and then filtered it. The flavor has a touch of smoke, a touch of chocolate, and some dried fruit/wine-like flavors. A very nice cup of tea this morning!
