I did my little single Anglo guy version of arroz con pollo. When I do a small batch for myself don't put the chicken in the rice pot. I marinate two chicken thighs in Badia mojo and then throw them in the oven for 45 minutes so I get crisp, browned mojo flavored skin and fat. I just boil up some Vigo yellow rice and cut up some Cuban bread and I am good to go. :D
