Smoked turkey: 36 hrs in brine, 4.5 hours smoking over hickory.

I do a butterflied or some call it spatchcock on the grill, I did two this year and I have found my favorite way, less than two hours and juicy and crisp skin, add a little smoke and whatever seasoning you like ,, there was none left. Tc
