St. Louis ribs, 5 1/2 hours low and slow with apple wood, cut and dried from my tree last spring. Finished with a garlic hoisin sauce.
Burnt my fingers, but well worth it!

Bacon Explosion:
First you put your bacon like this and season it.
Then the sausage.
roll it up and make it look nice.
little smoke action
baste and enjoy. I prefer thick sliced on a buttermilk biscuit with some slaw.

Do any of you Missouri and Kansas residents have a favorite KC BBQ restaurant? My family went to Gates and Smokehouse on N. Oak.
I've never had Bryant's or Oklahoma Joes, which I need to rectify.

Recently ditched my gas grill and got a Kamado Joe. The temperature control is amazing.
Babyback ribs
Pork Butt, cooked overnight at about 275 degrees F.
