They started with a handfull of green coffee beans, roasted them over an open flame, made a paste of the beans, several different transfers into steaming pots & finally some fresh ginger root was added. Coffee from Heaven .

just finished making a coffee roaster for my son out of a counter-top rotisserie oven. Looks kind of red neck but it works!

John, I have to agree, the Ethiopians do make some truly amazing coffee. When don in the traditional style it is heavenly!!!

To come close to the flavors of the Ethiopian brew, I bought and roasted Yirgacheffe beans to a light roast and when I get it right, the espresso or vac pot coffee is terrific. I have one roaster that I can trust to do the job right. Can't roast in my new digs...smoke alarms, don'cha know!
They are Ethiopian beans. There are other Ethiopian regions that produce beans.

PS, The first batches of Yirgh made the house smell like Blueberry Pie during roast and brewing. Sadly, the new shipments are fruity but, no pie.
