    I was actually looking at a bunch of borcht videos on You tube last night and one excellent one for fish pie. I make a version of my own borcht that I came up with a while back .Pretty tasty. I do cabbage,beets,potato,mushroom,onion and kielbasa with lots of dill for garnish. Very good with some rye bread and tea..Name:  012.jpg

    DOOOD,looks great but real Borsht had big chuncks of beef,Oh and a large (very large) dollop of smetana when served

    Beef is spensive and well ...and I am a huge kielbasa fan and it's cheaper. Happy medium.......sour cream is okay...but good smetana I have not. Although I have sustituted greek yogurt before and that were not too shabby. The thing that get's me the most is the dill though. Gotta be fresh and it too is getting expensive.My apartment is not conducive to keep a dill plant around either(sucks) and dried dill...well......need I say more(milktoast at best). We do what we can with what we got. I learned that from good russian peasant philosophy. God Love'm !

    My aunt tanya, taught my wife how to make real Smetana,In reality to me it is the same as store bought sour cream.
    Your going to cook this stuff all day, so the cheapest cut of beef is cheaper than keilbasa.
    Dill is a conundrum right now,I cannot find any,you need the big mature stalks,I got pickleling cukes I pick every day,no dill no russian pickles is no substitute.

    Y'know it's sad.....we have a rather sizeable group of russians in nearby Glendale. Out of all the ethnic festivals and such that we have here in Denver and surrounding areas, we have not one decent celebration for the Russian group. Not one that I know of ? That would be awesome, Food,dnacing,arts,music etc. What up wit dat ??? I would take a sick day at work for that. Closest thing we got is the Greek festival which they hold at the greek Orthodox church. Not the same though even though I like the Greeks just fine.
