    I'm feeling spring fever already. Here's what I'll have this May/June
    Fried Soft Shell Blue Crab Sandwich on griddled white bread. Avocado, Arugula, Jalapenos and Mayo. It'll look something like this: Name:  crab.jpg

    I know this will sound stupid but......I have never had soft shell crab,do you eat the whole kit n kaboodle or do you take out whatever innards are there eyes etc.? I'm ignant on the matter sorry .

    You cut off the front part, the face if you will. Then you take out the gills and remove the little flap on the bottom. Coat in seasoned flour, fry and eat.

    I was gonna ask if anyone has done any interesting variations on the classic Guac- I've used the leftover heat from a wood fire (after cooking all the meats) to lightly "grill" a avocado cut in half for just a couple of minutes then used it to make guacamole....not bad at all- I recently started adding a pinch of cumin to it- also very good

    So how bout this.Guac with some homemade cajun seasoning,thin cut roast or grilled pork with fried thin sliced summer squash n onions on french bread.I just made that up.
