After all this time, I've just made tea using a bottle of Volvic. Sweet Jesus, the difference is amazing! While I certainly can't afford to be buying bottled water for every cup of tea I make, going back to 'pure' tap water is definitely not happening—just been onto Amazon and ordered one of those water filter jugs!

The tea I was using (no pics—sorry) was a guricha or tamaryokucha from Ureshino, which so far has been fairly difficult to brew correctly. If the water is too hot or the brewing time is wrong, it easily brings out the astringency. However, with soft, bottled water, the tea itself was absolutely crystal clear, for one thing, and there was no astringency at all—very sweet, smooth and full of flavour. Whereas subsequent steeps became increasingly astringent, this time the tea remained sweet and pleasing until only a hint of astringency appeared on the fourth steep.

For any of you that aren't lucky enough to live in an area where your tap water isn't perfect for your preferred type of tea, and have considered trying bottled water but not done it yet, or for anyone who doesn't think it's worth the effort, neither did I until today, so I'd urge you to give it a go!

As I say, keeping a stock of bottled water isn't really practical but hopefully a water filter will set me in the right direction and this really has opened my eyes (or my mouth) to how my tea really should be tasting.

I would have thought you would have used rain water mate, being in a country that has so much rainfall. We used to put containers (billy cans) out in the yard after it had been raining for about five minutes (the first few minutes were just to let the 'dirty' water to clear the air), then make tea from the water we collected. Nothing sweeter.

Been drinking pu erh tea at work lately brewed in my little glass tea pot with the glass strainer basket thingy. When I drank this several months ago i did the whole tea rinsing think but lately I haven't been and I don't mind it without the rinsing. Also had some yerba mate tea with candied leatherwood honey...

I'm partial to Oolong and green tea, not so much on the black teas.

That's not a bad creed to live by. I still like a cup of joe in the morning myself.I just don't get all crazy with it anymore because too much tears me to shreds.
